Sheet Pan Chicken Dinner

It doesn’t get much easier, or healthier, than sheet pan chicken dinner!  Boneless, skinless chicken breasts and tons of vegetables all baked together on one sheet pan.  Dinner ready and on the table in less than 30-minutes!

WINNER!  WINNER!!  Chicken Dinner!!  This easy dinner is a lifesaver on those busy nights, or nights when you are just too tired to cook, but still want a homemade dinner.  And this recipe is also so versatile and can easily be changed up to include your favorite vegetables.

If cooking vegetables of different hardiness (potatoes vs. squash), just make sure to wait to add the more tender, delicate vegetables during the last 10-minutes of cooking.  Also, this recipe is great for using up the last of whatever vegetables you have in the refrigerator.  I am a lover of cauliflower and broccoli, so those are the veggies I typically use.  And mushrooms are soooooo good in this too!

Place chicken and veggies in an even layer on a parchment paper lined rimmed baking pan:

Change up the flavor of this dinner by using different types of seasonings. To keep my dinner as healthy as possible, I just misted my chicken and veggies with butter-flavored baking spray and sprinkled some mesquite-flavored seasoning on top.

I have also made this meal and brushed marinade on top of the chicken and vegetables before baking….

So you definitely have several options in the veggies you want to use and however you want to flavor your meal!

Sheet Pan Chicken Dinner

Serves: 4 Cooking Time: 20-25 minutes

Ingredients

  • 2-3 boneless, skinless chicken breasts- cut into large chunks
  • 1-2 cups broccoli florets
  • 1 cup cauliflower florets
  • 1/4 cup sliced mushrooms
  • 2-4 tablespoons liquid marinade or olive oil
  • 1-2 tablespoons of seasonings of choice (if not using flavored marinade)

Instructions

Preheat oven to 400-degrees. Line a large rimmed baking pan with parchment paper and spray with baking spray. In a large bowl (or ziplock bag) add the chicken chunks, broccoli, mushrooms, cauliflower, marinade and seasonings. Stir or shake to coat all the ingredients in the marinade and then dump onto prepared baking pan in a single layer. Option to also just spread the chicken and veggies out in an even layer on the pan, spray with baking spray and sprinkle with desired seasonings.

Bake in 400-degree oven for 12-minutes. Remove from the oven and flip the ingredients (add more delicate vegetables at this point). Place back into the oven for 10-11 minutes or until chicken is cooked through and vegetables are tender. Serve immediately.

Notes

Best eaten the same day made, but leftovers can be stored in the refrigerator and reheated in the microwave for 60-90 seconds.

Add brown rice, or a bread roll, to complete this meal.

Easy, healthy and DELICIOUS!!  And you only used one pan!  Makes clean-up just as easy!
