Graham Cracker No Bake S’mores Cookie Sandwiches

A S’mores No-Bake Cookie sandwich, made with a graham cracker flavored no-bake cookie, and milk chocolate and marshmallow sandwiched in the middle of the cookies.  All those yummy s’mores flavors that you know and love, but no campfire or burnt marshmallows required!

To celebrate National S’mores Day (August 10th) and the last weekend before school starts around these parts, I had to make a fun s’mores cookie.  I have been on a no-bake cookie kick lately and one of my readers suggested I try to make a s’mores no-bake cookie.  Thank you Ashley for the awesome idea!!  So using white chocolate (no you can’t taste the white chocolate) and fine graham cracker crumbs, I made a graham cracker flavored no bake cookie that is good enough to eat on its own!

But it’s National S’mores Day, so I had to add marshmallow fluff, mallow bits (they taste just like the marshmallows in the Lucky Charms cereal!!!) and milk chocolate to make s’mores sandwich cookies.  Use two cookies to make the s’mores sandwich, or use a graham cracker square as the bottom and use the graham cracker no bake cookie as the topper!

Graham Cracker No Bake S'mores Cookie Sandwiches

Serves: 20 Cooking Time: 1-minute


  • 1/2 cup unsalted butter
  • 1/2 cup milk (I used unsweetened vanilla almond milk)
  • 1-1/2 cups white granulated sugar
  • 3/4 cup white chocolate chips
  • 2 teaspoons vanilla extract
  • 3/4 cup fine graham cracker crumbs
  • 2-1/2 cups quick cooking oats
  • 1/4 cup fine graham cracker crumbs
  • 1/4 cup mallow bits
  • 1 cup marshmallow fluff
  • 4 Hershey's milk chocolate bars



COOKIES: Line a 9x13-inch baking pan with foil and spray with baking spray. Set aside. In a medium sized pot, on top of the stove top, add the butter, milk and sugar. Melt the ingredients over medium-high heat, stirring occasionally. As soon as the mixture starts to boil, set the timer for 1-minute. Let the mixture boil for the minute, stirring constantly. Immediately remove the pot from the stove once the minute is up.


Stir the vanilla extract into the butter-sugar mixture. Add the white chocolate chips into the mixture and stir until chips are mostly melted and incorporated. Add the graham cracker crumbs and oats to the mixture, stirring until all ingredients are incorporated. Pour the mixture into the prepared pan and spread into an even and thin layer.


TOPPING: Add the topping to the cookies, sprinkling the 1/4 cup graham cracker crumbs and mallow bits, evenly over the top of the cookies. Gently press the crumbs and mallow bits into the cookies. Topping is optional. Let cookies cool completely before cutting into desired sized squares.


ASSEMBLE COOKIE SANDWICHES: Option to use two no bake cookie squares or one no bake cookie square with one graham cracker square to make the S'mores Sandwiches. Place two squares of chocolate on the bottom cookie, top with one teaspoon of marshmallow fluff and then top with the S'mores No Bake Cookie.


Store cookies at room temperature in an airtight container.


Serve immediately once you add the marshmallow fluff, or the graham cracker gets soft.

These graham cracker no bake cookies are good all on their own…in case you just want a yummy cookie without the added marshmallow or chocolate.

But if you want to make a s’mores cookie sandwich….

And these s’mores cookie sandwiches are ooey gooey and messy….just like a good ol’ s’more!  ENJOY!!!  And Happy S’mores Day (I celebrate s’mores all year round though hehehe).  Lets celebrate together with these cookies!

    These are great. I love the graham crackers with white chocolate outside. That is a nice twist to the regular graham cracker. This one is a keeper. Thank you for sharing.

      Thanks Amy!! These no bake cookies are actually made like traditional no bake cookies, but no peanut butter, and I used white chocolate chips as the “glue” and added graham cracker crumbs with the oats! It’s sooooo good! Have a great weekend darling 🙂 XOXO
