The flavors of sweet potato pie, all wrapped up in one cookie! Mini marshmallows included of course. Mashed sweet potatoes are the base in this cookie dough, with the warm flavors on brown sugar and cinnamon and nutmeg. Mini Marshmallows are ,mixed into the dough, and when these cookies bake, the marshmallows melt and caramelize. Mmmmmm!

Can I tell you a secret?? Promise you won’t judge? I don’t like pie! Never have. But cookies….that’s a different story. I have never met a cookie I did not like hehehe. So taking a pie and turning it into cookies just seems right for me. Plus perfect timing for #ChristmasCookiesWeek!
With the busy holiday season, I actually made this dough and froze it for a week, before defrosting the dough in the fridge and baking these cookies up. I used my handy dandy Silpat to bake my cookies on too….which was perfect. Because the marshmallows in these cookies melt and caramelize and ooze out a little when they bake, and you don’t want your cookies getting stuck to your baking sheet!
Sweet Potato Pie Cookies

- 1/2 cup unsalted butter, room temperature
- 1-1/2 cups white granulated sugar
- 1 cup mashed canned sweet potatoes
- 1 teaspoon vanilla extract
- 1 egg, room temperature
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/2 teaspoon salt
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 2-1/2 cups all-purpose flour
- 1-1/2 cups frozen mini marshmallows
- TOPPING:
- 1/4 cup white sugar
- 1 teaspoon ground cinnamon
Instructions
Preheat oven to 375-degrees. Line a cookie sheet with parchment paper and set aside.
Open your can of sweet potatoes and drain the excess liquid. In the bowl of your stand mixer, affixed with the paddle attachment, cream the butter until pale and glossy. Add the sugar and cream the butter and sugar together until fluffy, on medium-high speed. Add the sweet potato to the mixture and mix until incorporated. Scrape down the sides of the bowl as needed. Mix in the egg and vanilla extract.
Change the mixer speed to low and slowly add in the cinnamon, nutmeg, salt, baking soda, baking powder and flour. Mix until just combined. Fold in the frozen mini marshmallows.
TOPPING: In a small bowl, mix together the sugar and cinnamon. Use a small cookie scoop to scoop cookie dough balls out and roll in topping. Drop cookie dough balls onto prepared cookie sheet. Leave a few inches in between cookies to allow for spreading. Bake cookies in 375-degree oven for 14-15 minutes. Let baked cookies set on the cookie sheet for several minutes before transferring to a wire rack to finish cooling.
So you can totally eat these cookies as is or add mini marshmallows on top right when you take them out of the oven. I liked them both ways!!
But adding more marshmallows to anything is never a bad idea…if you want to dress up your cookies a little, press a few mini marshmallows on top of your cookies as soon as you take them out of the oven. If you want to give your marshmallows a roasted look, just turn the broiler on high and pop your cookies back in the oven for a minute or so. BUT DON’T WALK AWAY! Constant supervision of cookies under the broiler is required so they don’t burn to a crisp. Or catch the marshmallows on fire hehehe.
