Apple Pie Blondies are a soft brown sugar blondie bar, but with the taste of an apple pie, all by adding fresh apples, Golden Oreo cookies and warm spices to the dough.
You can use any baking apple of your choice and can use graham crackers or vanilla wafers in place of the Golden Oreos. These are super soft because of the fresh apples, so make sure to bake until the bars are set.

- 1 cup unsalted butter, melted
- 2 cups light brown sugar, firmly packed
- 2 eggs, room temperature
- 2 teaspoons vanilla extract (I used Rodelle Gourmet Vanilla Extract)
- 1 teaspoon salt
- 1/8 teaspoon nutmeg
- 1/8 teaspoon cinnamon
- 2 cups all-purpose flour
- 2 apples, peeled, remove core and cut into 1/4 sized pieces
- 5 Golden Oreo cookies, broken into pieces
Instructions
Preheat oven to 350-degrees and line a 9x13-inch pan with foil or parchment paper. Spray the bottom and sides with baking spray. Set aside.
In the bowl of an electric mixer, mix together the melted butter and brown sugar until light and creamy. Add the eggs, one at a time into the mixture. Scrape down the sides of the bowl. Add the vanilla extract. Mix on medium speed until combined.
Change the mixer to low speed and add the salt, nutmeg , cinnamon and flour. Mix until barely combined. Remove the bowl from the mixer and add fold in the prepared apple pieces and cookie chunks.
Pour batter into prepared pan in an even layer. Optional to sprinkle raw sugar on top. Bake in 350-degree oven for 30-35 minutes, or until a toothpick inserted in the middle comes back without raw batter on it. Do not over bake. Blondies will continue to bake as they set on the counter.
Allow blondies to cool on the counter completely before cutting into desired sized squares.
Notes
Store at room temperature in an air tight container. Blondies stay fresh for 2-3 days. May last longer and not get soggy if stored in the refrigerator.
