1. Mini Apple Pies For Two

Ingredients

For the crust, you would need:

  • All-purpose flour
  • Sugar
  • Salt
  • Cold butter
  • Cold shortening
  • Cold Water

For the filling:

  • Sugar
  • Apple cider, juice, or just water
  • Cornstarch
  • Cinnamon
  • Nutmeg
  • Cloves
  • Lemon juice
  • Vanilla
  • Apples

Instructions

  1. Prepare the pie dough and let it cool for 1 hour.
  2. For the filling, whisk together the water (or cider or juice), sugar, lemon juice, spices, and cornstarch, and let the mixture boil.
  3. Stir the boiling mixture so that the sugar dissolves fully.
  4. Once the mixture thickens, remove from the heat and stir in the apples and vanilla.
  5. Once the dough and filling are ready, line half the dough in two ramekins of about 6 inches each.
  6. Put the filling on top, then add the second half of the dough.
