Thin Mint Cookies Girl Scout style….except these cookies contain no wheat and no dairy, and are gluten free, sugar free, soy free, nut and seed free and fruit free! So how the heck did I make cookies without using any of the normal ingredients you find in cookies?? Oh it wasn’t easy, but I did it. Thin Mint Cookies that are officially GiGi-fied.
So let me introduce you to GiGi…GiGi blogs at GiGi Eats Celebrities. I stumbled across her blog a few months back, and have been OBSESSED with GiGi ever since then (I mean that in a totally non-stalker kind of way….I swear). Whenever I need a laugh, I know which blog to head over to because GiGi tells it like it is! Plus GiGi is smart (she is a certified nutritionist and has a master’s degree in Nutrition Communications) annnnnnd she’s drop dead gorgeous.
But GiGi has major food allergies. So over on her blog awhile back, GiGi offered up the challenge of “GiGi-fying” recipes for her to try. I jumped on that boat like a 3rd grader with the right answer in class (pick me! pick me! pick meeeeeeeee!!). So here we are. After talking to GiGi, we decided on Thin Mint Girl Scout Cookies. Made food-allergy friendly and no-bake, because to me, Thin Mints are either eaten cold from the refrigerator or freezer anyways!
If you have a food allergy and want something sweet, these Thin Mint Cookies pretty much address every food allergy there is, so this is a great recipe for you. GiGi is taking my recipe and making a video of her making the Thin Mint Cookies and trying them (and trust me….she will give her honest opinion!), over on her blog. These cookies are super easy to make and I actually had all the ingredients on hand to make these…so no wild goose chase needed to get the ingredients to make these cookies. I used Lorann Professional Kitchen Peppermint Bakery Emulsion for the peppermint extract. I love the Bakery Emulsions from Lorann’s, but you can use whatever brand peppermint emulsion or peppermint extract you like. Make sure it is peppermint and NOT MINT EXTRACT. This makes a difference in how they taste.
Thin Mint Cookies ((Allergy Friendly))

- 1 cup Nuzest Rich Chocolate Protein Powder (or your preferred brand of chocolate protein powder)
- 3-1/2 tablespoons unsweetened cocoa powder
- 5 tablespoons Barlean's Butter Flavored Coconut Oil, slightly melted (or your preferred brand of coconut oil)
- 1/2 teaspoon liquid stevia extract (or more if you like them sweeter and depending on the amount of sugar in your protein powder)
- 1 teaspoon peppermint extract (I used Lorann's Peppermint Bakery Emulsion)
Instructions
Line an 8x8-inch baking pan with parchment paper and spray with baking spray. Set aside.
In a medium sized bowl, add the chocolate protein powder, unsweetened cocoa, coconut oil, stevia and peppermint extract. Mix until well combined. You may need to add water, in small increments, to get desired consistency.
Pour mixture out into prepared pan, spreading the mixture into an even layer in the pan.
Place pan in the refrigerator or freezer for several minutes until set. Once set, cut the cookies out using a round cookie cutter or just cut up into squares.
Option to roll the dough into balls instead, flatten slightly with your hands and place in the refrigerator to set.
Notes
Store cookies in the refrigerator in an air tight container. Cookies stay fresh for 4-5 days.
I was going to be all cute and cut the cookies out into circles, just like the Girl Scout Thin Mints. So I pull out my HUGE jar of cookie cutters and dump all the cookie cutters out trying to find my circle cookie cutter. I must have one right?! I mean that’s basic. And um. No. I do not have a circle cookie cutter. (((HEAVY SIGH))) So I just had to cut my cookies out into squares.
