Cannoli Chip Truffles

Cannoli Chip Truffles are an easy no-bake treat made with crushed cannoli chips, cream cheese (and a few other ingredients) and then dipped in white chocolate.  Kind of like the Oreo cookie truffle balls, but a cannoli chip version!

The wonderful people from The Original Cannoli Chips sent me several bags of their yummy cannoli chips.  And while these chips are yummy eaten all on their own, I decided to crush up all the cinnamon and sugar flavored cannoli chips and turn them into this easy no bake treat!

Even though this recipe is SUPER easy to make, I split up the work by making the balls first and freezing them until I was ready to coat them in chocolate.  Because it’s nice to have something in the freezer that you can pull out in a jiffy when you need a quick dessert!

The Oreo version of these truffles does not have any additional sugar or cinnamon (the cinnamon with Oreos would be weird??) like my recipe does.  The sugar was necessary to sweeten the truffles so they did not taste overwhelmingly like cream cheese, and the cinnamon added even more flavor.  I made my chief taste tester keep trying the mixture until it was just right 🙂

Also, if you do not have cannoli chips and want to make these, I imagine you could use Nilla Wafers, graham crackers or Biscoff cookies.

Cannoli Chip Truffles

Serves: 20-30 Cooking Time: 0-minutes

Ingredients

  • 8-ounces cream cheese, room temperature
  • 2-1/4 cups fine cannoli chip crumbs (I used Original Cannoli Chips Cinnamon and Sugar)
  • 1/2 cup light brown sugar
  • 1-1/2 teaspoons ground cinnamon
  • TOPPING:
  • 8-10 ounces white chocolate or vanilla almond bark
  • Optional: sprinkles or additional cinnamon

Instructions

In a large bowl combine the cream cheese, cookie crumbs, brown sugar and cinnamon with your hands. To get fine cookie crumbs, use a food processor and pulse until you get fine crumbs. You can also put the cookies in a ziplock bag and smash the bag with a heavy object until you get fine crumbs.

Once the ingredients are completely incorporated, use a small cookie scooper to scoop balls. Place balls in a single layer on a cookie sheet and refrigerate for 30-minutes. Once chilled, melt almond bark in the microwave and use a fork to dip each ball in the almond bark, coating completely. Place truffles on a strip of foil and add sprinkles or cinnamon before the almond bark sets. Once almond bark has set, store truffles in the refrigerator until ready to eat.

Notes

If you want to freeze the cookie balls before coating in chocolate, place the uncovered cookie balls in a ziplock bag in the freezer. Balls will keep several weeks in the freezer. Once ready to coat in chocolate, remove the balls from the freezer and let defrost in the refrigerator for several hours. Dipping frozen balls in chocolate may result in cracking.

 

I used vanilla almond bark to coat my truffles and then topped half with Valentine’s Day sprinkles from India Tree (so pretty right?!) and then the other half with a sprinkle of ground cinnamon.  So these truffles can be decorated to fit any theme!

I brought these into work for our monthly FTO meeting and the guys LOVED them!!  I always know when something is a hit when I start getting text messages telling me how amazing something is 🙂  Can’t go wrong with these quick and easy truffles!

    Kelly, these look so yummy! I love almond bark, but had forgotten about it – I haven’t even thought about it since I was a kid and my mom made treats with it. Adds so much flavor! These would be perfect for Valentine’s Day!

    What a pretty Valentines or anytime treat! I love the simplicity and delicate look of the truffles. I have made similar truffles with chocolate cream cookies in the past, and they were so yummy! Pinned!
