Cheerios and Cookies Marshmallow Treats

Honey Nut Cheerios and allergy friendly Sweet Potato Millet cookies make up these marshmallow treats that are unlike any marshmallow treat you have ever had!!  Because why not add cookie pieces to cereal treats?!  Yes…I am back.  With another cereal treat recipe.  But this one is special….

Partake Foods reached out to me and asked if I would create a recipe using their delicious, safe and healthy mini cookies that can be enjoyed by all.  Because their cookies are free of the top eight allergens, are free of artificial colors, flavors and preservatives and are vegan and gluten free!

So while the Sweet Potato Millet cookie is good all on its own, I decided to go ahead and create a crazy dessert with them.  Trying to keep in line with the Partake Food Promise of course…and these marshmallow treats are what I came up with.  So instead of regular mini marshmallows, I am busting out the Dandies vegan marshmallows for my treats.  You can also just use regular marshmallows if you aren’t vegan 😉

Simple ingredients….one amazing marshmallow treat!!

Cheerios and Cookies Marshmallow Treats

Serves: 30 Cooking Time: 1-minute

Ingredients

  • 1/2 cup coconut oil (or unsalted butter)
  • 7 cups mini marshmallows, divided
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon grond cinnamon
  • pinch of salt
  • 5 cups honey nut Cheerios
  • 3 cups of cookie pieces (I used 2 packages Partake Foods Sweet Potato Millet Cookies)

Instructions

Line a 9x13-inch baking pan with foil and spray with baking spray. Set aside.

In a large pot, on the stovetop over medium-high heat, melt the coconut oil. Once melted, add six cups of mini marshmallows. Stir the mixture until the marshmallows are completely melted. Remove the pot from the stove and stir in the vanilla extract, cinnamon and salt. Stir in the Cheerios one cup at a time, stirring in a cup of cookie pieces, after each cup of Cheerios. Repeat the process until you have added all the Cheerios and cookie pieces. Stir in the remaining cup of marshmallows.

Pour mixture out into prepared pan and option to press any leftover cookie pieces on top and sprinkle with additional ground cinnamon. Let bars cool and set completely before cutting into desired sized squares.

Notes

You can make these without the cookies. Just add an additional 1-1/2 cups of Cheerios to replace the cookie pieces.

These marshmallow treats are allergy friendly and school safe!  And despite these being so allergy friendly, my family dubbed them the best marshmallow treats I have made YET!  Allergy friendly = YUMMY 🙂

    Cheerios are my favorite cereal but I’ve never made marshmallow treats with them. I’m going to change that ASAP and start by making these!
