Sugar Free Sugar Cookie Bars with Chocolate Icing

Sugar free sugar cookie bars may seem like it’s too good to be true….but I assure you it’s not!  Today I am using Keystone Pantry Allulose Sugar Sweetener to make these yummy sugar cookie bars.  This recipe is for the Allulose Recipe Challenge and y’all know I love a challenge!  The challenge was to create a delicious, easy to recreate recipe using Keystone Pantry Allulose sugar…and these sugar cookie bars are the epitome of that!

I love my sweet and decadent desserts, but why not save ourselves a few calories while indulging, and use a sugar free sugar??  That just means I can eat more right?!  Allulose sugar is used to make these sugar cookie bars AND the powdered sugar used in  the chocolate icing.  Did you know you can make powdered sugar out of granulated sugar?!  You can!!  Instructions included in this recipe 🙂

Sugar Free Sugar Cookie Bars with Chocolate Icing

Serves: 20 Cooking Time: 20-22-minutes

Ingredients

  • SUGAR COOKIE BARS:
  • 1/2 cup unsalted butter, softened
  • 1-2/3 cups Keystone Pantry Allulose Sugar
  • 1 egg, room temperature
  • 1/2 tablespoon vanilla extract or vanilla bean paste
  • 1/8 or 1/4 teaspoon almond extract (depending on if you like the flavor)
  • 1 tablespoon water
  • 2-1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon ground nutmeg
  • pinch of salt
  • CHOCOLATE ICING:
  • 1 tablespoon unsalted butter, melted
  • 1-1/2 cups powdered Keystone Pantry Allulose Sugar (directions in notes)
  • 2 tablespoons unsweetened cocoa powder
  • 1-2 tablespoons warm water

Instructions

SUGAR COOKIE BARS: Preheat oven to 350-degrees. Line an 8x8-inch baking dish with with parchment paper and spray with baking spray. Set aside. Using an electric mixer, affixed with the paddle attachment, cream together the butter and Keystone Pantry Allulose Sugar. Add the egg, vanilla extract, almond extract and water to the mixer. Mix on medium-high speed until light and fluffy.

Change the mixer to low speed and add the flour, baking powder, nutmeg and salt to the butter-sugar mixture. Mix until just combined. Dump mixture out into prepared baking pan, pressing the dough evenly into the pan.

Bake in 350-degree oven for 20-22 minutes, or until the edges turn golden brown. Remove bars from the oven and allow to cool and set in the pan completely before adding the chocolate icing.

CHOCOLATE ICING: In a medium sized bowl, mix together the melted butter, powdered Keystone Pantry Allulose Sugar and cocoa powder. Add warm water by the tablespoon until desired consistency is reached. Spread icing on top of cooled sugar cookie bars.

Notes

I used 1/4 teaspoon almond extract in my bars and it was a very light flavor. POWDERED SUGAR INSTRUCTIONS: In a food processor, add two cups Allulose granulated sugar and 2 teaspoons cornstarch. Blend until sugar is a fine powder. Use immediately.

The sugar cookie bars are good all on their own…they taste kind of like a Twinkie (minus the cream)!  They have a soft, chewy bite to them.

But chocolate is ALWAYS a good idea!!  Bring on the chocolate icing!

    Interesting. I’m always up for a recipe that has no sugar. I have never heard of Allulose or Lang’s Chocolates, but I’m willing to give them a try. Thanks for sharing.
