Chocolate Ganache Bars with Peanut Butter Chex Crust

Homemade chocolate ganache made in the microwave and poured over a Peanut Butter Chex cereal crust.  This easy, no bake dessert is rich and decadent and tastes like a crunchy peanut butter cup!

This dessert is seriously easy to make.  One bowl (if you clean it out after making the crust) and microwaving is the only cooking required.  These make for a decadent treat that would be great to bring to a party.  Or stow away for those late night cravings!

You can use any cookie or cereal for the crust on these bars, but you guys know my obsession with the new Peanut Butter Chex, so that’s what I used in my crust!

But use your favorite cereal, graham crackers, cookies, etc.  Just crush them into fine crumbs first!

Chocolate Ganache Bars with Peanut Butter Chex Crust

Serves: 30 Cooking Time: 2-minutes

Ingredients

  • CRUST:
  • 2 tablespoons butter, melted
  • 1/2 cup peanut butter
  • 1/2 cup powdered sugar
  • 2-1/4 cups Peanut Butter Chex, crushed into fine crumbs
  • GANACHE:
  • 2 cups semi-sweet chocolate chips
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract

Instructions

CRUST: Line an 8-inch square pan with foil and spray the bottom and sides with baking spray. In a large bowl, mix together the melted butter, peanut butter, powdered sugar and cereal crumbs. Pour mixture into prepared pan and press firmly and evenly into the pan. Place pan in the freezer while you prepare the ganache.

GANACHE: In a microwave safe bowl add the chocolate chips and heavy cream. Microwave the chocolate chips and cream in 15-second increments, stopping to stir every 15-seconds and microwaving only until the chocolate chips are melted (approximately 1-1/2 to 2 minutes). Stir the vanilla extract into the ganache. Pour the ganache over the peanut butter crust and let cool at room temperature for 10-minutes before transferring to the refrigerator to chill completely. Once chilled, cut into desired sized squares.

Notes

Store in the refrigerator in an airtight container.
