Instant Oatmeal No Bake Cookies (75-CALORIES!!)

Instant oatmeal packets are used to make these no-bake cookies, which weigh in at just 75-calories per cookie!  If you are looking for a sweet treat that’s low in calories, and need to use up those packets of instant oatmeal in the pantry, then I have the recipe for you!

I was going through my pantry the other day and found two boxes of instant oatmeal packets that no one in my family appeared to have any interest in.  So I thought, why not turn them into cookies?!  That might get my family interested in eating that oatmeal hehehe.  Since my instant oatmeal was the 100-calorie packets, I figured I would just make this recipe as healthy as possible and use almond milk and Swerve sugar in them.  I have been on a mission to have some healthier treats in the house besides my usual over-the-top decadent treats.  Balance folks.  Balance 😉

You can use any flavor instant oatmeal that you have!  My packets for these cookies were Maple and Brown Sugar, but I also have plans for the box of Cinnamon Roll instant oatmeal still sitting in my pantry.

Instant Oatmeal No Bake Cookies

Serves: 15 cookies Cooking Time: 1-minute

Ingredients

  • 4 tablespoons unsalted butter
  • 3/4 cup sugar (I used Swerve granular sugar replacement)
  • 1/2 cup unsweetened vanilla almond milk
  • 1 teaspoon maple extract
  • 1 teaspoon vanilla extract
  • pinch of salt
  • 2-1/2 cups 100-calorie Maple and Brown Sugar Instant Oatmeal Packets (approximately 8 oatmeal packets)

Instructions

Tear off a long sheet of foil and place on the counter to drop your cookies on. In a medium-sized pot, on the stovetop over medium-high heat, add the butter, sugar and milk. Stir occasionally until mixture reaches a boil. As soon as the mixture comes to a boil, set the timer for one-minute and stir the mixture constantly. After one minute remove the pot from the stove.

Stir in the maple extract, vanilla extract, salt and instant oatmeal into the pot. Once combined, use a medium sized cookie scoop to drop cookies onto foil. Cookies set quickly.

Notes

If using a different flavor than Maple and Brown Sugar oatmeal, you can omit the maple extract. Store cookies in an airtight container at room temperature.

    These look yummy and I’ve got these handy packets in my pantry. How long do you let the cookies set up until they are dry enough to eat?

      Thanks Chiba! Let me know what you think if you try these! These cookies do not take long to set up….I always use a strip of foil to drop them on and they set quickly on that. I would say they are set within 30-minutes 🙂 XOXO

      Hi! You can use any flavor of oatmeal packets in this. If they aren’t the lower in sugar ones, then they will just be slightly more calories. Does that answer your question? I was slightly confused by it 🙂 XOXO
