Keto Chocolate Peanut Butter Cup Fat Bombs

Super easy, one bowl Keto-diet friendly chocolate peanut butter cups.  Just five ingredients in these “fat bombs” that are also gluten free and sugar free!  An awesome treat for my Keto folks out there.

I was provided with the Steviva KetoseSweet+ used in this recipe, in order to create a recipe highlighting the liquid sugar replacement.  All photos, recipe, thoughts and opinions are my own.

You guys….these chocolate peanut butter cups are SO EASY to make.  Seriously.  I made these fat bombs for two of my supervisors at work who are on the Keto diet.  I felt bad that they could not eat any of the regular goodies I brought in for my guys, so I made sure to make something Keto-friendly just for them!

So if you have a friend or family member on that Keto diet, you definitely need to surprise them and make them these treats.  I used the liquid Steviva KetoseSweet+ to sweeten these fat bombs, and a little goes a long ways because of how concentrated it is.  I personally liked that this brand of sweetener was thicker than other brands I have used.

So what is this sweetener???  Well, it’s the best keto friendly sweetener on the market!  KetoseSweet+ liquid contains allulose — a rare natural sugar found in maple syrup, figs, and raisins — and is a safe, non-caloric, non-glycemic sweetener. Allulose is not metabolized and is nearly calorie-free. #winning

Keto Peanut Butter Cup Fat Bombs

Serves: 12 Cooking Time: 0-minutes

Ingredients

  • 1 cup creamy peanut butter
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup coconut oil, melted
  • 2 tablespoons liquid Steviva KetoseSweet+
  • 1 teaspoon vanilla extract

Instructions

Line a standard cupcake tin with 12 cupcake liners. Set aside.

In a large bowl, mix together the peanut butter, cocoa powder, coconut oil, liquid Steviva and vanilla extract. Stir until smooth and all ingredients incorporated. Use a small cookie scoop to drop a scoop of the chocolate mixture into each cupcake liner.

Place cupcake tins in the freezer to set. Fat bombs are best eaten cold.

Notes

Store fat bombs in an airtight container in the freezer or refrigerator.

I made 12 large PB cups, but you could also make 24 mini cups instead!  These fat bombs are VERY chocolatey and rich.  And even if you aren’t on the Keto diet, I think you will like these too!  I brought these fat bombs and some blondie bars to a meeting at work.  My intention was for these fat bombs to go to just my supervisors on the Keto diet, and the blondies for everyone else.  But even people not on the Keto diet stole a few of the fat bombs from the goodie plate and were raving about how good these were!

    Great fat bomb! I do not like fat bombs but I am sure they taste extremely good.
