Bars, Blondies & Brownies

Mint M&M Brownies

Fudgy brownies made quickly with just one bowl and a few staple pantry ingredients…plus mint M&M’s!  With one bite you get a dense chocolate brownie taste with the crunch of the minty M&M’s.  A sweet balance of chocolate and mint.  And brownies from scratch are so easy!

From scratch brownie recipes really don’t get much easier than this one!  And to amp up the chocolate flavor in these brownies, I also used Rodelle Chocolate Extract, but just substitute it for more vanilla extract if you don’t have any chocolate extract on hand. Or if you are a total mint lover, use mint extract in place of the chocolate extract (maybe just use 1/2 teaspoon mint extract though).

These brownies remind me of Winter because of that minty flavor.  If you are in need of a quick dessert for a party, you should try these!  Plus everyone is always impressed when you tell them you made brownies from scratch.

Mint M&M Brownies

Print Recipe
Serves: 24 Cooking Time: 30-35 minutes

Ingredients

  • 10 tablespoons unsalted butter
  • 1-1/3 cup white granulated sugar
  • 3/4 cup + 2 tablespoons cocoa powder (I used Rodelle Gourmet Baking Cocoa)
  • pinch of salt
  • 1 teaspoon vanilla extract (I used Rodelle Baker's Extract)
  • 1 teaspoon chocolate extract (I used Rodelle)
  • 2 eggs, cold
  • 1/2 cup all-purpose flour
  • 1 cup mint M&M's

Instructions

1

Preheat oven to 325-degrees. Line an 8x8-inch baking pan with parchment paper and spray with baking spray. Set aside.

2

In a microwave safe bowl, add the butter, sugar, cocoa powder and salt. Microwave in 30-second intervals, stopping to stir the mixture every 30-seconds. Microwave the mixture until the mixture is fairly smooth and hot to the touch (approximately 1-1/2 to 2-1/2 minutes in the microwave).

3

Remove the bowl from the microwave and set the bowl aside for several minutes, to allow the mixture to cool so it is only warm to the touch. The mixture will look gritty. After mixture has cooled for several minutes, use a wooden spoon to stir in the vanilla extract and chocolate extract. Add the eggs one at a time to the mixture, vigorously stirring each egg into the mixture. Stir the flour into the mixture until the flour is fully incorporated into the batter. Beat the batter vigorously for 40 strokes. Fold in the mint M&M's to the brownie batter. Spread brownie batter into prepared pan.

4

Bake brownies on bottom rack in 325-degree oven for 30-35 minutes. Brownies are done when a toothpick inserted into the middle comes out without raw batter on it. My brownies took 23-minutes to bake.

5

Remove brownies from the oven and let set in the pan to cool completely before slicing into desired sized squares.

Notes

If using a 9x9-inch pan, start checking your brownies at around 23-minutes.

What’s on your holiday baking list??  I am still trying to decide what I will be making this year: something new or sticking with one of my tried and trues!  Leave me a comment below to tell me what y’all are baking up this season!
