Loaded Chocolate Chip Cookie Bars

These loaded chocolate chips cookie bars are your basic cookie dough recipe, but loaded with pretzels, Oreo’s, Kit Kats, crunch bars and M&M’s. Baked into a soft cookie bar.

Use your favorite candies, cookies and chips or pretzels in this recipe to customize it to your liking. It’s a great way to use up any leftover candies or other goodies in your pantry. Plus making cookies in bar form is always so much easier. Just make sure to not over bake. Bake until just lightly browned at the edges and there’s no raw batter on a toothpick inserted in the center. It will continue to bake as it sets after removing from the oven.

Loaded Chocolate Chip Cookie Bars

Ingredients

  • 1/2 cup unsalted butter, room temperature
  • 1/2 cup (4-ounces) cream cheese, room temperature
  • 1-1/3 cup light brown sugar
  • 1/2 cup white sugar
  • 1 tablespoon vanilla extract ( I used Rodelle Baker’s extract)
  • 4 egg yolks, room temperature
  • 2 cups all-purpose flour
  • 2/3 cup quick oats
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 teaspoons cornstarch
  • 1/4 cup pretzel pieces
  • 1/4 cup Oreo cookie pieces
  • 1/2 cup candy pieces (use variety of your choice or chocolate chips)

Instructions

Preheat oven to 325-degrees and line a 9x13-inch baking dish with parchment paper and spray the bottom and sides with baking spray. Set aside.

In a large bowl mix together the butter, cream cheese, brown sugar, white sugar and vanilla extract until smooth and creamy. Mix in the egg yolks. Stir in the flour, oats, baking soda, salt and cornstarch and mix until just combined. Fold in the pretzels, cookie pieces and variety of candy pieces.

Press the dough into an even layer on the prepared pan and bake in 325-degree oven for 20-25 minutes. Bars are done when a toothpick inserted in the center comes out without raw batter on it. Start checking at the 20-minute mark. Crumbs are okay on the toothpick. If toothpick is totally dry, you probably over baked them.

Bars will continue to bake as they set on the counter. Allow bars to cool completely before cutting into desired sized squares.

Notes

Store in an airtight container at room temperature. Bars will stay fresh for several days.
