S’mores Chocolate No Bake Cookie Bars

The flavors of a classic s’more, but in no bake cookie bar form!  A chocolate peanut butter no bake cookie, with the addition of mini marshmallows and graham crackers.  Make these cookie bars ahead of time for your next cookout…no fire needed.

Welcome to #Cookoutweek 2018!  What better way to celebrate Cookout Week than with a s’mores cookie??  In these no bake cookie bars I am using Barlean’s Butter Flavored Coconut Oil.  I am a huge fan of the Barlean’s coconut oil because IT DOES NOT TASTE LIKE COCONUT!  Seriously amazing!

You guys know I love a good no bake cookie (some may say I have a slight obsession with them…hmmmm).  And I have made a graham cracker flavored no bake cookie before, for a twist on a s’mores no bake cookie, but todays recipe is a chocolate based no bake s’mores cookie bar…with pieces of graham crackers, mini marshmallows and chocolate added.

I love no bake cookies because they are quick and easy, don’t require turning on the oven and are always a hit at parties or cookouts!  And by making them in bar form, it’s just like eating a s’mores bar 🙂

S'mores Chocolate No Bake Cookie Bars

Serves: 20 Cooking Time: 1-minute

Ingredients

  • 1/2 cup butter or coconut oil (I used Barlean's Butter Flavored Coconut Oil)
  • 1/2 cup unsweetened vanilla almond milk
  • 2 cups white granulated sugar
  • 1/4 cup cocoa powder
  • 1-1/2 teaspoons vanilla extract
  • 1/2 cup creamy peanut butter
  • 1/2 cup semi-sweet chocolate chips
  • 3 cups quick cooking oats
  • 1 cup mini marshmallows
  • 1 cup graham cracker pieces
  • 2 Hershey Milk Chocolate Bars

Instructions

Line a 11-inch x 7-inch baking dish with foil, and spray the bottom and sides with baking spray (you can also use a 9-inch x 13-inch baking dish if you want thinner cookie bars).

In a medium sized pot, add the butter, almond milk, sugar and cocoa powder to the pot. Put the pot on the stovetop over medium heat. Stir mixture occasionally as you measure out the peanut butter and get the oats ready. Once the mixture on the stove starts to bubble on top and boil, start the timer and boil for exactly 1-minute. Do not boil any longer. During that minute, stir the mixture constantly as it comes to a full, rolling boil.

Once the minute is up, remove the pot from the stove. Immediately stir in the vanilla extract to the mixture. Add the peanut butter and semi-sweet chocolate chips to the hot mixture and stir until almost combined. Stir in oats, one cup at a time, making sure each cup is completely mixed into the chocolate mixture, before adding the next cup of oats.

Let the cookies cool in the pot for a few minutes before folding in the mini marshmallows and graham cracker pieces.

Dump cookies into prepared pan, in an even layer. Press the Hershey chocolate bar pieces on top of the cookie bars while still warm. Option to press in additional marshmallows and graham cracker pieces on top.

Let the cookie bars cool and set completely in the baking dish before cutting into desired sized cookie bars.

Notes

Store leftovers in an airtight container at room temperature.
