Pop-Tart Sugar Cookie Bars

Homemade sugar cookie dough, with chunks of your favorite store bought Pop-Tarts and SPRINKLES!  This is such a fun dessert recipe to make, plus you can choose your favorite Pop-Tarts to use in this recipe, since the sugar cookie dough goes well with just about any Pop-Tart variety.

Pop-Tart Sugar Cookie Bars

Serves: 12-14 Cooking Time: 25-minutes

Ingredients

  • 1/2 cup unsalted butter, room temperature
  • 3/4 cup white granulated sugar
  • 2 eggs, room temperature
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon butter extract (optional)
  • 1/4 teaspoon ground nutmeg
  • pinch of salt
  • 1-1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1-1/2 teaspoons cornstarch
  • 1/2 cup rainbow sprinkles
  • 4 Pop-Tarts (I used Frosted Confetti Cupcake flavor), broken into pieces

Instructions

Preheat oven to 350-degrees. Line a 8-inch x 8-inch pan with foil and spray the bottom and sides of the pan with baking spray. Set aside.

In the bowl of a stand mixer, affixed with the paddle attachment, add the butter. Mix the butter on medium speed until smooth and creamy. Add the sugar to butter and mix until light and fluffy. Add the eggs, one at a time, into the mixer. Mix the first egg into the mixture completely before adding the second egg. Add the vanilla extract, butter extract, nutmeg and salt. Mix until combined.

Change the mixer to low speed and add the flour, baking powder, baking soda and cornstarch. Mix until just combined. Remove the bowl from the mixer and fold the sprinkles and Pop-Tarts into the batter.

Dump the dough out into prepared pan, in an even layer. Bake bars in 350-degree oven for 25-minutes. Remove bars from oven and allow bars to cool and set in the pan. Once bars are completely cool, cut into desired sized squares.

Notes

Store bars at room temperature in an air tight container. Bars stay fresh for several days when stored properly.

    I love Pop-Tarts! My son is 26 and still eats them all the time. Of course there’s not a ton of nutrition but they sure are delicious. Reinventing them is a wonderful idea.

    Oh my goodness, these look so good. I didn’t grow up in a house where there were pop tarts either and I didn’t buy them much for my children either, but my youngest son went through a phase where he loved them so much that he bought them for himself. I’ll have to bake some of these up for him for a treat!
