Sugar Cookie Jam Bars

Jam bars made with a Buttermilk Sugar Cookie crust, slathered with plum jam, then sprinkled with sugar cookie crumbs and a quick glaze drizzled on top. ย These cookie bars reminded me of a danish pastry, and are yummy for breakfast (no one is judging here!) or for a snack.

Remember when I made these Buttermilk Sugar Cookies??

Well the first batch of cookies I baked were a little under done and the cookies spread into each other. ย Not ready to accept defeat, I pondered what I could do with so many cookies that weren’t necessarily all that pretty, and kind of hard to eat without being completely messy.

So I smooshed several of the cookies into an 8 x 8-inch pan to create a cookie crust:

Busted out some yummy Jamnations Plum and Get It plum jam, and slathered it on top of my cookie crust:

Then took even more Buttermilk Sugar Cookies and crumbled them on top!

But that wasn’t enough for me, so I had to drizzle a glaze on top:

Sugar Cookie Jam Bars

Serves: 12 Cooking Time: 0-minutes

Ingredients

  • I batch Buttermilk Sugar Cookies (click on link below)
  • 1 jar of your favorite jam (I used one 10-ounce jar Jamnation Plum and Get It Jam)
  • Vanilla Glaze recipe (recipe in Buttermilk Sugar Cookie link)

Instructions

Bake a batch of Buttermilk Sugar Cookies and let cookies cool. Line an 8x8-inch baking pan with parchment paper and spray with baking spray. Once cookies have cooled, take several cookies and smash the cookies down into the pan to create a crust, making sure that the cookies are compacted into a firm crust. Spoon on a layer of your favorite jam on top of the crust. Take three baked cookies and crumble the cookies over the jam. Drizzle vanilla glaze over the top. Pop the bars into the refrigerator to set for 30-minutes, then cut into desired sized squares.

Notes

Store bars in an airtight container at room temperature.

Buttermilk Sugar Cookie recipe

Because the cookies had a cake-like quality to them, these bars were a cross between a coffee cake and danish pastry. ย Yum!!

    These look delicious Kelly, I love bar recipes, they are so easy and quick to make instead of rolling out individual cookies…will really love these with strawberry jam ๐Ÿ™‚

      Thank you Amy! I just can’t stomach wasting anything and try to recover from those failures in the kitchen by making a disaster into something that works. Except for that no bake cheesecake I made….that was a fail and will never make it to the blog hahaha

    Oh my goodness YUM! I love the pairing of buttermilk-baked goods with jam, it just works so well. Definitely would try these with raspberry jam!

    I was just thinking of your buttermilk sugar cookies (which I’m hoping to make soon!) when I read the title. These sound wonderful, kelly. Love the added plum jam though I’d probably use strawberry or raspberry because they are usually the only ones I have on hand (or peach!). I definitely love your crazy ideas, they are always delicious! I will have to double your cookie recipe for when I try it so I can make these afterward. They look so scrumptious ๐Ÿ˜€
