Gingerbread Life Cereal Marshmallow Treats

Gingerbread Spice Life cereal, marshmallows, warm ginger spices and white chocolate are combined to make the best marshmallow treats for your holiday goodie plate!  Easy, no bake and one batch makes a lot.  These are the perfect little treat to make when you are short on time and need an awesome dessert!

When Life gives you Gingerbread Spice cereal, you make Gingerbread Spice Life Marshmallow Treats!!  Have you seen the new limited edition Gingerbread Spice variety of Life cereal??  I love limited edition flavored anything.  Duh!  I am a food blogger!  So there I was one day, walking at a slow run through the grocery store (I actually time myself to see how fast I can grocery shop), and then I saw this Life cereal on an end cap by the dairy aisle.  Skrrrrrrrrrt.  Beep, beep, beep back the grocery cart up!  I stopped long enough to literally throw a box into my cart and off I went.  Best score of that shopping trip!

While most (normal) people eat their cereal with milk, I prefer my cereal enrobed in ooey, gooey marshmallow and melted white chocolate.  Wait…white chocolate what?!  Yes!!  But trust me.  You can’t taste the white chocolate.  It just adds this richness that is amazing.  And these treats need that because the Life cereal is not very sweet on its own.  The Gingerbread Spice Life flavor reminded me of Cinnamon Life…so you totally substitute Cinnamon Life  for the Gingerbread Spice Life, in this recipe.

Gingerbread Life Cereal Marshmallow Treats

Serves: 30 Cooking Time: 5-minutes


  • 1 cup Cinnamon Toast Crunch cereal, crushed into fine crumbs
  • 5 tablespoons salted butter
  • 1 (16-ounce) bag mini marshmallows, divided (about 8 cups total)
  • 1-1/2 teaspoons vanilla extract (I used Vain vanilla extract)
  • 1/2 teaspoon ground cinnamon
  • 1/8 teaspoon ground ginger
  • 1/8 teaspoon ground cloves
  • 3/4 cup white chocolate chips
  • 6 cups Life Cereal (I used Gingerbread Spice Life cereal)



Line a 9x13-inch baking dish with foil or parchment paper and spray with baking spray. Pour the cup of Cinnamon Toast Crunch crumbs evenly onto the bottom of the pan. Set aside.


Place a large pot on the stovetop and on medium heat, melt the butter. Once butter has melted completely, measure out seven cups of mini marshmallows (you should still have about 1 cup of marshmallows left in the bag---save those for the end!) and add the mini marshmallows to the melted butter. Stir the marshmallows and butter continuously, until all of the marshmallows have completely melted.


Once all the marshmallows have melted, remove the pot from the stovetop and stir in the vanilla extract, cinnamon, ginger and cloves. Add the white chocolate chips to the marshmallow mixture and stir the chips until they are mostly melted into the mixture. Add the Life cereal to the marshmallow mixture, one cup at a time, making sure each cup is fully mixed into the marshmallow mixture before adding the next cup. When adding the sixth cup of Life cereal, add the remaining mini marshmallows from the bag, into the mixture. Stir until combined. The mini marshmallows added at the end won't melt completely, which makes for a chewy, marshmallow-y treat!


Pour marshmallow treats out into prepared baking pan and gently use your hands or rubber scraper to gently distribute the mixture evenly into the pan. If I use my hands, I will spray my hands with baking spray so my fingers don't stick to the mixture. Sprinkle a light dusting of cinnamon on top and add sprinkles (if desired).


Let bars sit at room temperature for 1-2 hours to cool completely, before slicing into desired sized slices.


You can use the limited edition Gingerbread Spice Life or Cinnamon Life cereal in this recipe. Store in an airtight container at room temperature.

Inspired by the cute Gingerbread men on the box of Life, I decided to add some gingerbread men sprinkles on top of my bars 🙂
