Vanilla Pudding Sugar Cookies

Sugar cookies, with the addition of dry vanilla pudding mix to the dough, to make a super soft and ultra vanilla-y cookie!  I love adding dry pudding mix to cookies because not only does it add flavor, it also makes the cookies SO SOFT!

I had a hankering for some sugar cookies and found some leftover vanilla pudding mix in my pantry.  So I figured I would add what was left in the pudding mix box into my sugar cookie dough to see what would happen.  And you know what happened??  THESE COOKIES!  The dry pudding mix added extra vanilla flavor and helped to keep these cookies uber soft!

I feel like all cookies deserve to be rolled in sugar….totally optional though!

Vanilla Pudding Sugar Cookies

Serves: 16-17 cookies Cooking Time: 10-minutes

Ingredients

  • 6 tablespoons unsalted butter, room temperature
  • 1 cup white granulated sugar
  • 1 egg, room temperature
  • 1 tablespoon vanilla extract (I used Rodelle Organic Baker's Extract)
  • 2 tablespoons vanilla instant pudding and pie filling mix (dry)
  • 1-1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • TOPPING:
  • 1/4 cup sugar

Instructions

Preheat oven to 350-degrees and line two cookie sheets with parchment paper and set aside. In the bowl of a stand mixer, affixed with the paddle attachment, add the butter and sugar. Mix on medium-high speed until fluffy. Add the egg and vanilla extract and mix until combined.

Change the mixer to low speed and add the dry pudding mix, flour, baking soda and salt. Mix until barely combined. Remove the bowl from the mixer and use a rubber scraper to ensure all of the ingredients are combined.

In a small bowl add 1/4 cup sugar. Use a standard sized cookie scoop to scoop cookie dough balls. Roll the balls in the bowl of sugar and place on the prepared cookie sheets. Baker cookies, one cookie sheet at a time, in 350-degree oven for 10-minutes. Allow cookies to chill and set on the cookie sheet for 10-minutes before transferring to a wire rack to finish cooling completely.

Notes

Store cookies in an airtight container at room temperature for up to a week.

    Hi Kelly! I really want to make this recipe I have everything except the “DRY” VANILLA PUDDING” would it be ok to add a vanilla snack pack to the other ingredients? And if not so you have a recipe for cookies ANY cookies that I could just dump a pudding in?? HELP!!😵

      The printed version of the vanilla pudding sugar cookie is missing step one entirely. It begins at step 2 after the ingredients list. Otherwise it is a great recipe.
